Introduction : One of South Africa’s historic wine estates, situated near Stellenbosch producing some of our finest wines and offering 120-seater A la Carte Restaurant with additional seating for 100 guests on a picturesque terrace, overlooking their vineyards and with a separate function facility for up to 100pax, seeks a highly talented new Head Chef for their upmarket operation. The Kitchen and Front of House staff have been in the employment of the estate for many years and not many Head Chefs have worked here before, so stability is one of this companies prime attraction. Key performance areas identified regarding this challenging position are as follows: – Leading the kitchen brigade in all aspects of the kitchen operation.- Developing new dishes and menus in consultation with Restaurant Manager.- Recipe development and maintaining food costs as per agreed budgets.- Responsible for menu costing and stock controls.- Procurement of all food related items.- Maintain the operational efficiency of the kitchen, including functions and events hosted by the restaurant.- Manage and develop the performance of all kitchen staff.- Manage the kitchen costs and financials within budgetary guidelines.- Consistently increase service levels.- Ensure adherence to all the HACCP, health and safety regulations.- Maintain excellent housekeeping.- Ensure good communication and coordination between front of house, the kitchen and other team players. The successful candidate will be in possession of an appropriate tertiary qualification backed by a proven track record * a minimum of 5-7 years management/kitchen experience in a Restaurant environment * experience with stock controls, ordering and costings * excellent leadership skills * the ability to manage the kitchen with minimal supervision * the ability to inspire and motivate kitchen staff towards achieving a common goal * work irregular hours including weekends and Public Holidays as per operational requirements * attention to detail and a passion for cooking essential excellent communication and interpersonal skills.
